Egg Plant Neapolitan
 

Ingredients

  • A
  • 3-4 egg plants
  • 4 T white flour
  • 1 cup water salt and pepper to taste

  • B
  • 2 cups cottage cheese
  • ½ cup parsley chopped
  • 2 cloves garlic pounded
  • 1 ½ T black pepper powder
  • ½ cup breadcrumbs
  • 1 green chilli (optional)

  • C
  • 1-2 t oil
  • 1 t garlic pounded
  • 2 t oregano
  • 6 stalks spring onion finely chopped
  • 1 can peeled tomatoes (225 gms)
  • 1 t lingham sauce (optional)
  • 2 t tomato paste dash of tabasco salt to taste
  • ½ t italian seasoning

  • ½ - ¾ cup grated cheese parsley fro garnishing

 


Method

  1. Make a batter of flour and water. Add salt and pepper. Cut egg plants into round slices,
    dip in batter and deep fry. Keep aside.
  2. Mix all B ingredients
  3. In a saucepan heat oil, fry garlic, add remaining C ingredients to make pizza sauce and cook for a few minutes.
  4. In a greased pyrex dish spread the pizza sauce as the bottom layer, then a layer of egg plant over it,
    followed by a layer of cottage cheese and again the pizza sauce. Repeat the layers again.
  5. Sprinkle grated cheese and parsley on top, dot with butter and bake in medium oven for approximately 30 minutes.
