Sczechuan Buns
 

Ingredients

  • Pau
  • 250 gms white flour
  • 1 t instant yeast
  • 2 t sugar
  • 1 t oil
  • 1 1 cornflour

  • Filling
  • 1 can mock duck (285 gms) or
  • 3 mashed beancurd &1/2 cup minced button mushroom
  • 1 onion chopped
  • 2 cloves garlic chopped
  • 1 T light soya sauce salt & pepper to taste few drops of sesame oil
  • 1/2 cup water
  • 1 T flour mixed with 1/2 T oil red food colouring (optional)

 


Method

  1. Mix all the ingredients for pau with enough water to make a pliable dough.
  2. Knead the dough extremely well for 10 minutes, till smooth. Cover and keep aside till it rises to double its size.
  3. For the filling, fry onion and garlic till tender. Add soya sauce, pepper, salt, sesame oil, water and mix well.
  4. Add in the mock duck or minced beancurd and mushroom mixture and simmer for 5 minutes.
  5. Add the flour and oil mixture and the colouring. When the mixture thickens, remove from fire.
  6. Divide the dough and the filling into 6 equal portions. Flatten one portion of the dough and stuff the centre with filling and shape like a small bun.
  7. Place them on greaseproof paper and steam for 15-20 minutes, over high heat. Pau can be steamed without any filling and then deep fried.
