Method
- Mix all the ingredients
for pau with enough water to make a pliable dough.
- Knead the dough
extremely well for 10 minutes, till smooth. Cover and keep aside till
it rises to double its size.
- For the filling,
fry onion and garlic till tender. Add soya sauce, pepper, salt, sesame
oil, water and mix well.
- Add in the mock
duck or minced beancurd and mushroom mixture and simmer for 5 minutes.
- Add the flour
and oil mixture and the colouring. When the mixture thickens, remove
from fire.
- Divide the dough
and the filling into 6 equal portions. Flatten one portion of the dough
and stuff the centre with filling and shape like a small bun.
- Place them on
greaseproof paper and steam for 15-20 minutes, over high heat. Pau can
be steamed without any filling and then deep fried.
