Egg Plant Szechuan Style
 

Ingredients

  • 600 gms egg plant
  • 3 T oil
  • 100 gms minced mock duck
  • 2 t hot bean paste
  • 1 T chopped ginger root
  • 1 T chopped garlic
  • 1/2 t salt
  • 2 T chopped spring onion with stalk

  • Sauce
  • 1 t thick soya sauce
  • 1 t sugar
  • 1 t ajinomoto
  • 1 t dark vinegar
  • I t chilli garlic sauce
  • 1 t kecap
  • 1 t cornstarch
  • 1 t water
  • 1 T hot bean paste

 


Method

  1. Peel egg plant, quarter each lengthwise, slice each quarter into 2 1/2 inch sections.
  2. Deep fry egg plant until tender for about 3 minutes and keep aside.
  3. Mix together all ingredients of sauce and keep aside.
  4. Wash mock duck in hot water, mince and stir fry in oil. Add hot bean paste, ginger and garlic and stir fry for 1 minute. Add egg plant, salt and sauce. Mix well and cook till sauce thickens.
  5. Garnish with spring onion and serve with szechuan buns
