Method
- Peel egg plant,
quarter each lengthwise, slice each quarter into 2 1/2 inch sections.
- Deep fry egg plant
until tender for about 3 minutes and keep aside.
- Mix together all
ingredients of sauce and keep aside.
- Wash mock duck
in hot water, mince and stir fry in oil. Add hot bean paste, ginger
and garlic and stir fry for 1 minute. Add egg plant, salt and sauce.
Mix well and cook till sauce thickens.
- Garnish with spring
onion and serve with szechuan buns
